Comment choisir un bon champagne ?
Tout d’abord, qu’est-ce qu’un bon champagne ?
Comme vous le savez sans doute, pour obtenir avant d’obtenir un champagne de qualité, il faut également des raisins de qualité qui donneront un vin de qualité !
Donc, vous l’aurez compris, le terroir vinicole joue un rôle très important voire essentiel dans la qualité du champagne, en effet, le terroir est véritablement primordial, ainsi que la situation vinicole pourcentage d’ensoleillement, sur le microclimat, la nature des sols etc.
Alors une attention particulièrement minutieuse doit être apportée à la vigne. Une approche plus raisonnable et écoresponsable (moins d’utilisations de produits chimiques nocifs) sera adoptée, voire même une culture des vignes en biologique ou en biodynamique. Une telle approche garantira sans en douter, une excellente maturation des raisins.
Cette première phase dans l’élaboration d’un champagne d’exception est incontournable.
La sélection des raisins pendant les vendanges est également un critère à ne pas négliger. L’appellation champagne est attribuée à une vendange qui aura été effectuée manuellement.
Alors quels critères pour choisir un bon champagne et pour quelles occasions ?
Les jolies bulles de champagne nous ont de tous temps accompagnées dans nos fêtes mondaines et nos célébrations plus intimes pour notre plus grand plaisir ! Mais comment bien choisir son champagne ? En réalité, cela dépendra des goûts de chacun et de l’occasion à célébrer. . En revanche, quelques critères sont intéressants afin de ne pas se tromper.
Comme exprimé plus haut, le champagne est avant tout une affaire de goût. Mais, boire une coupe de champagne, c’est apprécier des moments conviviaux en respectant les goûts de chaque convive. Il est donc avant tout primordial de bien apprendre les dénominations des divers dosages, ici du champagne brut nature ou encore extra-brut, brut, sec ou demi-sec et carrément doux !
Le reste, c’est l’œuvre du viticulteur et de l’œnologue. Vous trouverez une multitude de vins de champagne aux saveurs différentes, mais découvrons ensemble quelques champagnes et pour quelles occasions :
- les champagnes proposés en apéritif sont généralement des champagnes bruts ou extra-bruts.
- les champagnes que l’on appréciera pour accompagner des desserts sont davantage choisis parmi les champagnes doux, secs mais également demi-secs.
- les champagnes gastronomiques qui accompagneront nos repas gourmets sont plutôt ses champagnes blancs de blancs, blanc de noirs et également les cuvées millésimées.
- les champagnes qui accompagnent nos grandes occasions sont davantage les champagnes blancs de blancs, ils seront appréciés pour leur délicatesse et leur vivacité.
Comment lire l’étiquette sur une bouteille de champagne et la décrypter ?
Les mentions obligatoires qui doivent être inscrites sur une bouteille de champagne sont :
- la mention “champagne”
- la marque ou la société qui a effectué la mise en bouteille
- la teneur en sucre ou le dosage qui identifie le type de champagne (brut, sec, doux etc.)
- le volume de la bouteille (en cl ou ml)
- le nom du fabricant
- la commune du fabricant
- le pays d’origine
- le numéro d’immatriculation professionnel délivré par le CIVC (et son statut)
Les autres mentions non-obligatoires :
- Bien que certains détails du produit ne soient pas obligatoires, ceux-ci peuvent tout de même être inscrits sur la bouteille de champagne tel que.
- le titre alcoométrique volumique en pourcentage (% vol.)
- la mention des allergènes, très appréciée par les personnes allergiques
- la mention « la consommation de boissons alcoolisées pendant la grossesse, même en faible quantité, peut avoir des conséquences graves sur la santé de l’enfant » ou son logo
- le « point vert » qui identifie les producteurs engagés dans un contrat écoresponsable de récupération des emballages
- l’année de production du millésime
- les spécialisations de cuvées (rosé, blanc de blanc…)
Les étiquettes sur une bouteille de champagne
Toute bouteille de champagne possède une étiquette sur laquelle les mentions obligatoires doivent apparaître afin d’informer le consommateur.
Cette étiquette est en quelque sorte la pièce d’identité de la bouteille de champagne. En effet, comme décris plus haut, c’est sur celle-ci que vous retrouverez la traçabilité du produit (sa provenance, le producteur, les cépages employés et ses caractéristiques : (degré d’alcool, sa contenance, etc.)
Ce qui doit immédiatement être lisible, c’est l’A.O.C. “Champagne”, c’est-à-dire l’appellation qui garantit la provenance du champagne. Puis, vous devez avoir la possibilité de connaître le nom de la maison de production, généralement les grandes enseignes s’empressent de les afficher. Ensuite, vous devez aussi connaître le lieu où a été élaboré le champagne, ceci est une obligation ! Une autre information qui se doit claire, c’est le dosage en sucre, celui-ci doit être clairement indiqué. Ensuite, vous en apprendrez plus sur la bouteille avec les annotations “brut”, “sec”, “non dosé”…
Vous pourrez également vous référer à des petites lettres majuscules telles que :
- RM – Récoltant manipulant
- NM – Négociant Manipulant
- CM – Coopérative de Manipulation
- MA – Marque d’Acheteur ou Marque Auxiliair
- RC – Récoltant Coopérateur
- SR – Société de Récoltants
- ND – Négociant Distributeur
Néanmoins, aucune de ces mentions NON ne vous garantira si c’est un bon champagne ou pas ! La seule façon de le savoir pour vous, c’est d’y goûter !
